Village of Sainte-Eulalie-de-Cernon
This charming village in the south of France is steeped in history. The fortified walls and towers erected by the Knights of St. John of Jerusalem testify to this.
Stroll through the narrow and quiet streets, visit the commandery and arrive at the square near the fountain and the church will make you imagine the time when the Knights Templar received this village in 1159. After the Templars are the Hospital of the order of St. John of Jerusalem who became the owners and continued the improvements.
Currently the village has about 250 inhabitants of which some are artisans. A leather workshop located at the entrance of the ramparts still uses ancestral techniques by perpetuating the tradition of saddler.

Roquefort-sur-Soulzon
The town is located in the Occitan region on the flank of Combalou. Following the collapse of the limestone plateau of Combalou natural caves and faults were created. These faults are called "fleurines" and ensure perfect ventilation at the cellars of Roquefort where is refined the King of cheeses, Roquefort.
The legend
We are told: "A young shepherd, probably in the eleventh century, was seduced by a pretty young lady, abandoned her sheep, and forgot in a cave his snack made of bread and curd of sheep. Later returning to the cave he found his bread and Penicillium Roquefort had done his work by turning the cheese Roquefort.
The Roquefort Company was born in 1863 and is still made in the image of the little story.
The visit of the cellars of the cheese dairy allows you to follow step by step the evolution of the King of cheeses. Each winery benefits from a particular microclimate that controls a specific ripening process. The guide explains that Penicillium Roqueforti flowers spontaneously. The stumps are grown from rye bread.
The entire course takes place underground in this particular rock where the temperature does not exceed 10 °. So if you go in summer plan a warm clothing for the visit. The latter ends with a tasting and the opportunity to buy the precious puts on the spot.

20th meeting of cutlers and farriers
Each year, during the first weekend of September is held the festival "Irons and Blades" at the Gaillac estate in Sauclières.
The place called Gaillac is not easy to find with GPS, but when you approach the parking lot, already busy, installed for the occasion on a meadow, you instantly have the sounds of this fabulous party in the ears .
The blows of the hammers on the incandescent blades, freshly extracted from the forge by men blackened by fire, punctuate our arrival. The atmosphere is at its zenith! An overcrowded bar welcomes all visitors before tasting roast ham, typical of the region.
Associations of cutlers and wrought ironworkers present their inventive and unique works that can be acquired by the visitors. Exhibitions of knife assemblies are carried out by the exhibitors (be careful if you come to the region by plane, knives are not allowed in the cabin).
A shepherd walks his geese and a spectacle of falconry is the joy of young and old.

The Couvertoirade
Despite its size, this small medieval town has a precious historical treasure, classified among the most beautiful villages in France. Its unique Templar castle in France and its cemetery and ramparts are classified as historical monuments.

The Cavalry
Some documents mention The Cavalry as early as 1154 which was located north of the present village on the edge of the ancient Roman road.
The name of the place, the Cavalry, means "Knighthood" where dwell the knights of the Temple, the Knights Templar. The village was created near the road that crosses the Larsac plateau.
The remains of the chapel remain in the current church. It was part of a set of buildings fenced off a wall. From the walkway of the walled enclosure you can admire the panorama to the chain of Cevennes.

Millau Viaduct
Designed by the French engineer Michel Virlogeux and designed by the English architect Lord Normam Foster, it spans the Tarn with a jump of 2460 m. It is the highest in the world culminating at 343 m above the valley.
The best way to discover the valley is to go for a boat trip with the Viaduct Boatmen in 1 hour and 30 minutes on a 9 km route from the village of Creissels.
The adventure begins and surprises punctuate our route. Gray herons passively watch us pass by interrupting their miraculous catch. The buildings of beavers are noticed here and there, but no trace of their inhabitants.
The course gives our captain the opportunity to tell us the construction of this fabulous building that is the viaduct of Millau supported by two of the tallest piles in the world which, it must be said are even more impressive views from below. He tells us that the workers in charge of their construction had to sign a contract by which they agreed that their body, if they fell into the concrete with ultra fast setting, be abandoned there. In return, the widow would receive a sum of 5 million euros compensation. No such accidents have been recorded.
Towards the end of the route, the boat brings us closer to the troglodyte village of Peyre, hanging on the rock, ranked among the most beautiful in France. Here is an unforgettable moment of calm and discovery not to be missed.
