The restaurant which, over the years, has seen so many personalities and satisfied customers, rebrille back to the firmament of gluttony.
Thus, to take control of the kitchen, it was appealed to one of the best black-yellow-red kitchen specialists who could imagine, namely Cédric Callenaere.

Passionate about Belgian-Brussels cuisine, the chef, originally trained at the Ecole Hôtelière de Namur, knows the culinary tricks of our country better than anyone else.
Long time at the furnace of the Golden Wheel, when it was held by the truculent Jef Degelas, Cédric Callenaere is literally crazy about the products of our land.
A range of textures and flavors that he likes to magnify with all his talent and with the help of his boundless imagination ...
A professional loving both authenticity, therefore, which does not exclude, on the contrary, a beautiful inventiveness put at the service of more Brussels gastronomy.

Spend some time at the reins of the Brussels Brewery, with the family Veulemans who had in his time created Les Armes, our man found, here in the heart of the Sacred Island, a real opportunity to speak again of the more tasty
ways.

This through a map that includes of course all the great classics that have made the name of the brand for years, but also suggestions that are regularly the indicator of the coming season.

Thus, in this return of the beautiful days, one of the best tributes that can be returned to our repertoire of flavors obviously passes necessarily by the asparagus.
These are declined from the most traditional ways to begin with, with a more than traditional version "flemish", that is to say, flanked by crushed hard boiled eggs, parsley and melted butter, all raised with some nutmeg and, here it is the "Cédric's touch", a touch of muslin sauce.
The same delicate muslin that can of course accompany the delicious asparagus equally succulently with a good, well-balanced vinaigrette.

However, more creative this time, the chief of weapons does not fear a little folly brilliantly imagined, associating with these same asparagus, for the delight of guests, a beautiful poached egg, always unctuous muslin but, in addition , a generous spoon of "Royal Sélect" caviar, for a sumptuously tasty result.

Business lunches

Finally, beyond the big classic menu, attractive menus and seasonal suggestions, the Brussels Weapons also offer, during lunchtime on weekdays, a very nice "business lunch" which changes every two weeks, and this at the price very reasonable.

Both starters and dishes are to choose from four starters (in which we always find soup of the day or cheese croquette and two suggestions variable) but also among five dishes (the American prepared and fresh fries as well as the grilled Bearnaise salmon was always present, in addition to three other equally variable suggestions, the dessert being left to the choice of the guests.
